This was our delicious Sunday night meal. Made with Red Tail Ridge organic beef, as well as organic avocado, it was the perfect wholesome and warming way to end the weekend. Instead of sour cream, I served this with sheep’s yoghurt which has a similar taste and consistency, if you can find good organic sour cream though, I say go for it. I added red kidney beans for some carbs but you could serve this over rice, or with some good quality organic tortillas.
