I am currently obsessed with these new chocolate – like treats. I may have had 3 already today and it’s not even morning tea time..there are lots of raw chocolate recipes around these days and they are absolutely delicious but most have some sort of sugar added to them to counteract the bitterness of the cacao or cocoa. I know that honey has some amazing health giving properties including being anti bacterial and fungal but the reality is that it still contains fructose which is a form of sugar (honey contains fructose & dextrose). The other 2 darlings of the new raw chocolate phenomenon Agave & Maple Syrup are no different either, in fact Maple Syrup is almost entirely sucrose.
So with this in mind I started experimenting with my favourite sweet but healthy snack – Coconut butter. It has all the sweetness of coconut flesh, the health benefits of coconut oil and no added sugar. I made a couple of different types of chocolate – one with cacao, one just plain coconut and one with macadamia butter in the middle but the world is your oyster – you could throw in cacao nibs, goji berries and tons of other ingredients to add variety.
As with a lot of my recipes I don’t really measure things out and generally go by taste & texture but here’s a rough guide to making these delicious treats
Sarah’s Guilt Free Coconut Treats
100g coconut butter (I like Artisana but you could use any brand)
30g coconut oil
Raw vanilla powder
Gently heat the coconut butter & oil in a saucepan until it is liquid. Add vanilla stir well. Spoon into moulds and freeze for 2 hours. Store in the fridge or freezer if you like them really hard.
Variations –
Cacao – add as little as a teaspoon or more to taste if you like a darker chocolate
Macadamia – 3/4 fill the mould with the coconut mixture then add a 1/2 a teaspoon of nut butter
Enjoy, anytime.
