I found this recipe at an amazing place in Margaret River called Providore. It has loads of delicious condiments, sauces and spices with lots of recipes to go with it. This recipe calls for the Rogan Josh spice mix from Providore but you could easily create your own spice mix or alternatively source out another Rogan Josh spice mix. It’s delicious the next day too so make sure you make enough for left overs.
Lamb Rogan Josh (serves 4)
1kg diced lamb
500g plain yoghurt – I used Sheep’s yoghurt
2 tbs of Providore Rogan Josh spice mix (or alternative RJ spice mix)
1/2 cup of tomato puree
1/3 cup of oil – I used olive oil & butter
4-6 onions finely diced
6-8 cloves of garlic crushed
fresh coriander to serve
Combine lamb, yoghurt and spice mix in a bowl and leave to marinate for at least 10 minutes.
In a heavy based oven proof dish or pan, heat oil and cook onions over medium heat for 20 mins (or until softened), add garlic then add lamb mixture stirring to combine. Add tomato paste, salt to taste and bring to a simmer. Cover the dish and remove to a pre-heated oven at 100 degrees C. Cook at this temperature for at least 2 hours or until meat is tender.
Serve with chopped fresh coriander and a dollop of yoghurt if desired. Oh and a helper makes everything better too.
