Healthy Peanut Butter Fudge

This peanut butter fudge is so decadent and delicious and it’s relatively healthy. Free from the usual suspects like grains, dairy and of course sugar it’s also SUPER easy to make and if you know me well, you’ll know that’s the most important part. I’ve been making it every week and it’s a hit with the whole family. I think I’ve perfected the recipe so I hope you enjoy it.

Peanut Butter Fudge

Ingredients

2/3 cup of organic peanut butter
1/3 cup of honey
1/3 cup of coconut oil
1 teaspoon of vanilla extract
1/2 teaspoon of cinnamon

Mix all ingredients in a saucepan and combine over a low heat until thoroughly mixed through. You can also add some Collagen Powder here however it can make it a little more “grainy”.

Pour mixture into a baking paper lined dish, I use a 750ml Pyrex dish. Refrigerate until hard then top with melted chocolate then refrigerate until both are hardened.

Chocolate Topping

100g of good quality organic chocolate (I used this one)

Melt chocolate in bowl over simmering water.

Allow to sit out for a little to soften before cutting and turn upside down for more consistent results.
