This recipe has been requested many many times and to be honest, it’s a long time coming. One of the main reasons for this is because a lot of the food we cook these days is by feel. I’ve noticed that the more time I spend in the kitchen cooking and also around my partner the less I follow recipes. My partner Iggy actually never follows recipes and seems to possess a natural intuition around creating food flavours and combinations. So, with that in mind, I have managed to get some “rough” measurements so that you can create this delicious pesto too! I would suggest, however, tinkering with it yourself to get it right as everything below is an approximate measurement.
Kale Pesto
1 bunch of organic Kale – we like Cavolo Nero
1/3 cup pine nuts
1/2 clove garlic
10g slice parmesan cheese
1/4 cup olive oil
Salt and Pepper
Trim bottom stalks from the Kale and cut into pieces and steam well. Add all dry ingredients and well steamed kale into food processor. Process whilst adding in olive oil until you have the right consistency. Season to taste.
Enjoy however you like, as a dip, marinade, sauce for vegetables or meat or as we prefer mixed through good quality gluten free pasta.
