So the obsession with gelatin gummies continues! But when searching for a different recipe, I wanted some variation on the fruit theme, partly for aesthetics (look how pretty the red and white look together in the pic!) and partly to see if I could incorporate some healthy fats into the mix. This recipe is the perfect solution. Loaded with medium chain triglycerides from coconut cream it also delivers healthy protein and carbohydrates. Perfect for snacks between meals and pretty to boot. It’s super easy too.
Ingredients
Coconut cream separated from one can of full fat coconut milk or cream (I used Ayam brand) – this should equal 1 cup
2 Tablespoons of Gelatin
2 Tablespoons of Rice Malt Syrup or Honey – less if you want less sweetness
1/2 teaspoon of vanilla powder or some pod scrapings for great flavour
Pinch sea salt
Pinch of cinnamon
Combine coconut cream, sweeter, vanilla, salt and cinnamon over a heat and allow to mix/dissolve. Add in Gelatin one tablespoon at a time whisking the whole time to ensure it doesn’t clump. Once it’s all well combined (approximately 5 mins) spoon or pour into moulds or a pyrex dish and refrigerate for about 20 mins. Enjoy.
